Our local gastronomy and meals service
Ayacara cuisine springs directly
from the cornucopia of locally-produced seafood and agricultural products.
The most representative dish is curanto, a hearty catch-all stew
traditionally cooked in a hole in the earth.
Our gastronomy has great variety in menus, ingredients and regional
cuisine elements, without sophistication, though taking special care
to preserve the natural tastes and flavors.
We offer wide variety of meats (cow, pork, also poultry), so much
linked to the local traditions. Upon request we serve also vegetarian
meals cooked with organic grown vegetables at our garden and greenhouse.
If you are fond of seafood you will greatly enjoy discovering the diversity
of shellfish and fishes collected on the shore by the lodge which
is undoubtedly free of any pollution. The richness in seafood originated
a typical regional dish "curanto."
We have our own organic garden and a greenhouse, with a great variety
of fresh vegetables and an apple orchard.
Chile
has become one of the world biggest wine exporters so Chilean excellent
wine quality is now worldwide known. We have a rich wine cellar with
tasty Chilean wines which go greatly with our meals, we offer also
good national beers option.
At the beginning of the day, before we set off for the adventure outdoor
sports, we offer hearty breakfast with delicious homemade bread and
German patisseries, influence of the German settlers in Southern Chile.
In Ayacara there in no restaurants available so at the El Avellano
lodge we offer full boarding service.
Try the local specialties:
· Cancato - grilled fish stuffed with a variety of vegetables,
cheese or sausage.
· Curanto - various meats and sausages, fishes, mollusks and crustaceans,
potatoes and corncobs cooked in an earthen pit overlaid with leaves. It's
also prepared in a kitchen in a large earthenware pot. However cooked,
it is eaten in layers, and usually reserved for major fiestas and holidays
with Chilean wine, of course!
